Rosemary, Lemon, + Garlic Chicken | On Our Table

Thursday evening while the men played softball, several of us wives were talking about food prep. I mentioned how I much prefer good ole red meat to chicken, so it's a bit amusing to me that the first recipe I am blogging about is chicken.

I also find it entertaining that I forgot to take a picture of our actual supper. I have a few of the pretty table waiting for the food and one of the chicken, but nothing to remember the fresh garden salad or the sweet corn from my kind in-laws.

Jason made the chicken is his dutch oven, and I don't know the details about how hot it was or how long it needs to bake. We kind of guess at that yet and tend to go more by site and smell than by a timer and thermometer. I'm sure this would be delicious baked in the oven as well, but once again I have to details about bake time, etc.


Rosemary, Lemon, + Garlic Chicken

Ingredients:
 * one whole chicken
 * two lemons, sliced
 * 5 cloves of garlic, quartered
 * rosemary
 *  1/4 cup butter
 * salt + pepper, to taste
 * (optional) one onion, sliced

Heat charcoal and prepare set-up for your dutch oven.
Rinse the chicken and take the skin off(if that's what you prefer), then place inside your pot. If you choose to use an onion, place the slices in the bottom of the pot beneath the chicken.
Smear butter all over the chicken, then stuff the lemon slices and garlic in and on top of the chicken.
Salt + pepper your chicken. Sprinkle a liberal amount of rosemary on top.
Put the lid on your dutch oven. Place the dutch oven on top of the preheated charcoals, piling more hot coals on the lid.
Sit and enjoy a campfire while your chicken cooks(or go finish the rest of supper).
Once the chicken smells and looks done, eat it and enjoy!
